DCS World is a free package available on Steam that comes with a weaponless P51 Mustang and a seriously hardcore physics engine, with additional aircraft painstakingly modelled and available as DLC. Given the near overwhelming complexity of the simulation doing it this way is perfect. You'd need a long time to get comfortable with any of the aircraft and systems available, let alone all of them. If you feel that modern games lack depth and you want something you can really sink your teeth into, then DCS World is definitely something to bring out the Maverick in you. The dial on the side of the T.16000M FCS throttle makes a perfect collective for budding helicopter pilots. However, even more acutely than Cliffs of Dover, you'll run out of buttons and axes long before you run out of things to assign to them. Although, to be fair, DCS is so complex that you almost run out of keyboard controls once you've included multiple key modifiers, so it's hardly a flaw in the FCS HOTAS.
