Last year, Intel bumped the core counts on their mainstream LGA 1151 socket from a maximum of four cores to a maximum of six cores,  taking the fight to AMD's Ryzen AM4 socket which changed the game in the mainstream CPU/motherboard market.

It has long been rumoured that Intel plans to release 8-core CPUs onto the mainstream desktop market, enhanced iterations of Intel's Coffee Lake architecture that deliver a 2x boost in core/thread count over Intel's Kaby Lake 7700K, a processor that released less than two years ago.

Newly uncovered documentation in Intel's website has revealed the company's plans to release 8-core (8C) Coffee Lake-S Xeon-E series processors. Sadly the documents in question cannot be downloaded by members of the public, though the title alone offers enough information to confirm that oct-core processors are on the way.

The document also mentions ES processors, a shorthand way of referring to Engineering Samples, making it likely that 8-core Coffee Lake processors are already in the wild, albeit only to select OEMs and other system manufacturers.

Right now, Intel is expected to release Octo-core Coffee Lake-S processors in Q3 2018 alongside a new Z390 series of consumer motherboards. In less than two years Intel will have moved from 4-core processors to 8-cores on mainstream sockets, all thanks to the injection of competition into the x86 market with AMD's Ryzen series.
